Holiday dinner doesn't have to mean another turkey fighting for room in the oven. Because Florida stone crab season runs right through the heart of the holidays, that timing gives you a pretty good excuse to put something different on the table.
Captain Stone Crab lists the Florida season as October 15 through May 1, with fresh claws available during season, and flash-frozen product used during summer.
Best of all, the hard work has already happened before those claws reach your kitchen. Serve them chilled, crack them at the table, and let the crab do what it does best.
Put the Claws Out While Everyone Arrives
Before the turkey, roast, or whatever else you've got planned hits the table, start with cold stone crab claws over ice. Add lemon wedges, Captain's mustard sauce, and a few mallets or crackers, then let everybody get to work.
It's one of the easiest holiday appetizers you can serve because it doesn't require another burner, another pan, or another last-minute cooking project. It's also a lot more memorable than another cheese board or stale bread that you grabbed from the grocery store and all of the fresh loaves were picked over.
And because cracking claws gets people gathered around the same platter, it works particularly well during that stretch of the evening when everybody is arriving, pouring drinks, and catching up.
Give Stone Crab Some Room on the Main Table
Does the holiday gathering crew prefer that stone crab not stay in appetizer territory?
Put a full platter on the table alongside the traditional holiday meal, or let the claws take over as the main event for Christmas Eve, New Year's Eve, or any celebration where you'd rather trade carving knives for crab mallets.
Keep the setup straightforward: chilled claws, mustard sauce, drawn butter, lemon, and a bowl for shells.
That's it.
When the seafood is this good, piling on extras usually doesn't improve things.
Work Stone Crab Into the Rest of the Menu
Have extra claw meat or want to carry the Florida seafood theme a little further? There are plenty of ways to work stone crab into holiday dishes without making every course about crab. Remember that the trick is knowing when to stop. You bought stone crab because it tastes like stone crab. Let it.
-
Stone Crab Deviled Eggs: Add picked claw meat to a classic holiday appetizer.
-
Stone Crab Bisque: Use crab meat in a warm first course before bringing out chilled claws.
-
Stone Crab and Citrus Salad: A bright break from heavier holiday foods.
-
Surf and Turf: Serve chilled claws alongside steak or prime rib.
-
Stone Crab Cocktail Hour: Keep the main dinner traditional and make the seafood the opening act.
Know How Much You Need
Captain Stone Crab recommends about 1.5 pounds of claws per person when stone crab is the meal.
If you're serving it as one appetizer among a big holiday spread, you'll naturally need less. Think about whether guests are getting a taste before dinner or sitting down specifically to crack claws.
And if your family already knows its way around a stone crab platter, erring on the more generous side isn't the worst problem to have.
Don't Wait Until the Last Minute to Ship
Captain ships via UPS Next Day Air or FedEx Priority Overnight, but shipping dates and arrival times aren't guaranteed. For a time-sensitive gathering, Captain currently recommends scheduling your delivery at least two days before the event rather than betting the holiday meal on a last-minute shipment.
Get the claws in, refrigerate them properly, and take shipping stress off the holiday checklist.
Give the Holidays a Little Florida Flavor
Stone crab doesn't need to replace the traditions your family already has. It can sit right next to them.
Whether it’s putting a platter out before dinner, making it the Christmas Eve centerpiece, bringing claws into the New Year, or you’re starting a new tradition where everybody knows there'll be a mallet waiting for them when they get to the table, stone crab is a fun way to liven up the holiday season.
Let’s face it, the holidays already bring people together. Fresh Florida stone crab just gives everybody something good to crack into while they're there.
